chicken taco soup.  

i got this recipe from my best friend's mom in high school.

it has yet to fail me.  it's so easy to make that dall could do it, and that's saying something. 

this is a fool proof recipe that never fails to excite the taste buds.  as newlyweds this was almost a weekly meal for us.  it's only taken me a year to share it.

and of course i forgot to take a picture of the finished product.  all the more reason to make it yourself!

Chicken Taco Soup

2 cans corn (do not drain)
2 cans stewed tomatoes (i use mexican style), 
put in a food processor. pulse until chopped
1 can diced tomatoes with green chilis
1-2 cans beans (i use great northern and pinto), drained and rinsed off
1 large can white chicken breast broke into pieces
(you can shred cooked chicken breasts as well)
1 package taco seasoning
1 package or 1/4 cup ranch dressing mix

Place everything in a large pot. Mix together.
Cook on medium heat, until heated through.
Top with sour cream, shredded cheese, and tortilla chips.


(i tend to eat soup like dip.  feel free to buy 2 bags of tortilla chips when you make it, you'll need em.)
